Carbon Dots & Edible Coatings for Shelf-Life Extension
On-Campus Research — Institute of Advanced Materials for Sustainable Manufacturing
The Problem
A prior research project focused on edible biopolymer coatings to reduce weight loss, preserve firmness, and extend strawberry shelf life under controlled storage conditions.
How We Solved It
The coating system was formulated through pectin/chitosan solutions, optimizing concentration, viscosity, and dip-coating conditions. Coated and control samples were compared through mass loss, firmness, color, and surface appearance across controlled storage windows.
Key Results
- Lower weight loss in coated strawberries versus control.
- Improved firmness retention.
- Formation of a semi-permeable protective barrier.
Business Impact
Demonstrates formulation thinking, experimental validation, and sustainability-oriented materials engineering with potential relevance for food systems, shelf-life optimization, and waste reduction.
